I have never had a chocolate waffle, covered in ice vanilla cream and warm chocolate ganache. Until now. This gluten free vegan chocolate fudge waffle sundae is just down right HEAVENLY!
When I had the thought of making a decadent chocolate waffle, there was no hesitation in my mind. Taking one my favorite things to make my family for breakfast {homemade gluten free waffles} and turning it into a full-fledged, decadent dessert.
I was going for a fudgy, crispy on the outside, chewy on the inside waffle. Achieved. I didn’t want to just stop there though. Why not make it a WAFFLE SUNDAE? Topping that warm waffle with a few scoops of So Delicious Dairy Free cashew milk vanilla ice cream was the first step. Step number two, whipping up a quick batch of my go-to simple chocolate ganache. I drizzled that chocolatey goodness over the top. Yes, my waffle sundae was now complete.
Chocolate overload. Waffles for dessert. All the good things in this recipe!
- 1 3/4 cups Sarah's gluten free flour blend
- 1/2 cup high quality cocoa powder
- 1/2 cup cane sugar
- 1/4 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1/4 cup dairy free mini chocolate chips {such as Enjoy Life}
- 1 1/2 cups So Delicious Dairy Free unsweetened almond milk or coconut milk
- 4 tablespoons non-hydrogenated shortening, melted {such as Nutiva}
- 1/2 teaspoons pure vanilla extract
- 3/4 cup dairy free chocolate chips
- 1/4 cup So Delicious Dairy Free coconut milk coffee creamer
- 1-2 pints So Delicious Dairy Free cashew milk or coconut milk vanilla ice cream
- Preheat waffle maker, setting it to medium-high heat.
- Whisk together flour, cocoa powder, sugar, brown sugar, baking powder and salt. Stir in 1/4 cup mini chocolate chips. Set aside.
- Add almond milk, melted shortening and vanilla. Stir until just combined.
- Spray preheated waffle iron with cooking spray. Pour batter into center of waffle maker {amount varies by iron}.
- Close waffle maker and cook until waffles are crispy and golden brown, 3-5 minutes. Repeat with remaining batter.
- To make ganache, place chocolate chips and coffee creamer in microwave-safe bowl. Microwave on low in 30-second intervals, stirring until smooth.
- To serve waffles, top with scoops of dairy free vanilla ice cream. Drizzle warm ganache over top. Serve immediately.
